Yay..it's Saturday!!

Sorry I have been MIA, but my best friend came to town and I was visiting with him all day yesterday. I hope you all have been well!! I've been great. Sunny warm weather and great friends!! what could be better. Lat night my friend stayed over and we made these

Black Bean and Cilantro Quesadillas

Serves 2

These basic quesadillas come together quickly and adapt well to many variations. Add salsa, sautéed onions or peppers and diced red or white onion, if you like. Serve with a green salad for dinner or alone as a hearty after-school snack.
Ingredients

2 (8-inch) flour tortillas
1/4 cup grated Monterey Jack or cheddar cheese
1/2 cup cooked and drained black beans
2 tablespoons coarsely chopped cilantro
Method

Set a heavy skillet over medium heat. When hot, add a tortilla and warm. Flip tortilla. Sprinkle half of the cheese evenly over tortilla. Lightly cover cheese with half of the beans and cilantro. Top with a second tortilla. Flip and warm on the second side. When beans are hot and cheese is melted, slide quesadilla onto a cutting board and slice into four wedges.

Per serving (1 quesadilla/130g-wt.): 240 calories (70 from fat), 8g total fat, 2.5g saturated fat, 15mg cholesterol, 540mg sodium, 31g total carbohydrate (4g dietary fiber, 1g sugar), 11g protein

you seriously have to try these! They are such a great snack! Yum.

So I noticed that when I do the Shred, there is one exercise I can never do, I mean no matter how many times I try, I just cannot do it, and that is the front lunge. It always hurts the front of my leg, like the muscle is going to pull or something. Ugh. I will master it though! Oh, and I also cannot do a full push up :( Still do the girl push ups. I have very weak arms..ha ha. We also went to see Harry Potter last night!! great movie!

This morning I was up bright and early and did level 2 and 3 of the 30 day shred. I may go for a jog/walk this evening. I can't believe it is almost mid July already. the summer is going so fast :( I'm haivng salmon burgers for dinner tonight, so I am so hyped for that!!!! I love salmon and I don't eat it nearly as much as I should. I love when I get hyped for meals, cause back in the day, I would hide when it was meal time..I would b afraid. I love that I don't really feel that anymore..well sometimes.

I will update later..I leave you with a pic of me and my best friend since kindergarten..and my next door neighbor since kindergarten.this was from last night :)and my blond is slowly but surely coming back!!!
