Now to reveal 7 random facts about myself.

1. I am an only child. I really would love to have a sister though

2.I used to be an avid jogger, until I ruptured my achilles tendon..I still have immense pain there when I walk too much or twist my ankle the wong way. So no more jogging for now :(

3. I love cooking, absolutely love it! It totally relaxes me and I love coming up with new recipes and following recipes from books and online.

4.I have lived in England before..all by myself! It was terrifying and exciting at the same time. I took a travel course there for 7 months (in Leeds), I made many great friends and would love to live in the UK one day :)

5. I LOVE LOVE sushi! I could eat it everyday! It's is one of my top fave foods. I love california rolls, Dynamite rolls..well almost every roll!

7. Out of every person I know, I am the closest to my mom. I can tell her anything. Good or bad. She is not judgmental at all. She helped me so much through the worst of my ED, she never left my side. We had 3 hour long talks, we just got to know each other so much more. Now we talk every single day :)

8. I love taking really hot bubble baths, I take one almost every night, they help me relax and sleep much better :)

Well, I'm off to nap now..I have been home for 2 days with pink eye..it's really gross. I have eye drops that i have to put in every 2 hours. It's a mess :( Hopefully I am back to work tomorrow. have a great day!!!

The day After Christmas

Hello! I hope you all had a great Christmas! I had an awesome Christmas. I am now home in my pj's relaxing. I had a great time staying at my parents, but I am super glad to finally be home now. There were so many people there Christmas day, 17 people! Christmas dinner was so delicious. I ate a ton of turkey and sweet potatoes :) I also really lucked out in the gift department, I got a ton of gift cards..to Sephora , Starbucks,LaSenza, MAC, Bath and Body Works, and 2 $100 ones for Whole Foods! So excited about that one. I also got a 36 inch Aquios LCD tv from my grandparents! They knew how much I needed a tv and I was seriously shocked when I got this!! I'm watching it right now and it's awesome :)

Also got a ton of jammies, socks, some perfume, slippers, sheets and pillowcases. I also got an assortment of whole bean coffees (all Starbucks) from my cousin :)

The best gift of all had to be the one my dad gave my mom, he didn't even tell me about it prior. He surprised her with 2 tickets for a Caribbean Cruise! She was seriously in tears :)

So it was a great Christmas. I'm back to work Monday :( I've gotten so used to sleeping in till noon the past few days, gonna be tough to get up early.

I am totally exhausted right now. Amazing how the holidays wipe you out! Rest assured though, I have been eating like a mad woman for the past week, I also really didn't work out, I only managed to use my moms treadmill once :)

So right now me and my boyfriend are going to watch 27 Dresses, much to his dismay ;)

Old And New

Hello! I'm having a lovely time here at my parents. It's a full house, my relatives flew in from Toronto this afternoon and there are now 7 people in the house! Including my 2 year old niece, she is soo adorable. here are some pics I took this evening with her, we were getting silly with the computer

I am definitely eating well, mom made a great pasta dinner, and I had 2 servings! My relatives were shocked, in a good way :)

I did 45 mins on my mos treadmill this morning and then did 25 minutes of yoga. Felt so good :)
Tomorrow we are all heading to the mall for some last minute Christmas Shopping. My aunt and uncle already gave me my gift, they wanted me to open it so bad..a $100 gift card to La Senza and a $100 gift card for MAC cosmetics. I was so excited !!
I may just hit up MAC tomorrow ;)
Earlier today I was going through my moms pics and I found some pics of me when I was a little tyke..feast your eyes on these..haha

Last but not least I want to say RIP to Brittany Murphy who passed away today, she was only 32! She is in 4 of my very favorite movies, Just Married, Clueless, Little Black Book and Uptown Girls. :(

Home for the holidays

Good afternoon! I have just arrived at my parents for a glorious week of relaxing. No work for 1 whole week! I have extended family flying in from Ontario tomorrow, cousins who I only see at Christmas, so I'm really excited!

Needless to say, I have been pigging out for the past few days on junk food. My work had gotten a whole ton of catered goodies in yesterday, a lot of them being baked goods and I went nuts, just because they were all so darn good and tempting.

No worries though, my mom has an awesome treadmill here I can use everyday :) My boyfriend will be coming here tomorrow also and spending a few nights :) I'm soo excited for Christmas dinner! My mom makes the best Christmas dinners :) Last Christmas I wasn't at my best, so I really didn't eat at all. Damn Eating disorder :( But this year I will definitely make up for it! I will post lots of pics soon! I love being home. makes me feel so happy :)

Dreaming Of A white Christmas

Good Evening! I feel like I have been abandoning my blog lately, but work has me so busy! It"s a busy season for people to take trips, so I have to plan over 50 trips right now! Good news is, I'm almost done. Friday, everyone will be on way to their destinations :)

I'm till on my oatmeal for breakfast kick. I can't get enough of them :)
My eating lately has been so crazy! But in a good way. I'm eating way more than I ever have and don't feel too bad about it. last night, I had a bowl of cereal, after I was done I decided that i wanted another bowl..so I did! And felt good about it. back in the day, I would have went for a 10 mile jog to burn the few calories off.

This is a recipe I made for dinner last night, and am having the leftovers for dinner today,

Sweet Potatoes with Tempeh

ngredients

1/4 cup reduced-sodium tamari
1 tablespoon mirin (sweet Japanese cooking wine)
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon onion powder
1 teaspoon toasted sesame oil
1 (8-ounce) package tempeh, cut into bite-size chunks
2 medium sweet potatoes (about 2 pounds), peeled (optional) and cut into bite-size pieces
2 teaspoons extra virgin olive oil
1/8 teaspoon ground ginger
1/8 teaspoon ground cinnamon
1 tablespoon canola oil
Salt and pepper to taste
2 tablespoons finely chopped parsley
Method

Put tamari, mirin, granulated garlic, onion powder and sesame oil into a wide, shallow dish and stir to combine. Add tempeh, toss to coat, cover and set aside to let marinate for 30 minutes. Meanwhile, toss sweet potatoes with olive oil, ginger, cinnamon and 1 1/2 tablespoons of the marinade from the tempeh. Set the yams aside.

Preheat oven to 350°F.

Heat canola oil in a large skillet over medium heat. Drain tempeh then add and cook, turning frequently, until golden brown, 5 to 7 minutes. Transfer to a 2-quart baking dish, toss with sweet potatoes, salt and pepper then cover with foil and bake until sweet potatoes are tender, 30 to 35 minutes. Garnish with parsley and serve.

Oh my goodness this was absolutely delicious! It is honestly the first time I have ever tried tempeh, and I LOVE it! I have seen Heather (Health, Happiness and Hope) use it quite a bit in her wraps and decided to buy a pack. Best decision ever. I will definitely be buying it again and making this recipe again.

I still have not had any time to even try my new teas out, so this evening I will be having some and will definitely review tomorrow :)

Tonight is going to a relaxing night, I'm going to chill and watch some Gossip Girl :)

What's This? A Weekday Post?!!

Hello!! I haven't posted on a weekday in quite awhile due to work and being so exhausted in the evening :) I got off work a little early today to go to my boyfriends Christmas work party :) There is going to be a ton of tempting food there! I just have to restrain myself and stick to the healthier things. Tomorrow is a glorious day off of work! I know I'll probably be out a little late tonight so I took the day of just in case ;)

I have seriously been eating my weight in sweet potatoes lately. Mainly in he form of rounds. So good. Oatmeal every morning still..pumpkin oats! Love them.

I've also been on a little tea kick as of lately, I am kinda getting sick of my holiday teas, so I went and got a few new ones :)

I haven't tried any of these yet, but I will review them as soon as I do! I'm just finishing off my Candy cane lane, I have 2 teabags left. I love that tea so much! I have the Sugar Plum Spice, which I DO NOT like at all. Bleh. It was actually pretty nasty! I cannot find Sugar Cookie Sleigh Ride anywhere here! I really want to try it :)

Hopefully tomorrow morning I can go swimming and maybe get some yoga in. I haven't worked out in a few days an I totally notice it. The weather here is atrocious, so no jogging at all :( Too cold!

X mas tree update

I dug my tree out of a gross closet that it's been in since last January and opened up the box and this HUGE spider came crawling out right towards me!!! It is seriously the biggest spider I have ever seen in my life! I couldn't even kill it because it crawled away so fast under the couch. Now I can't find it!! EW. I tried to take a quick pic of it with my Blackberry, but it was too fast! Now I'm not going to be able to sleep tonight until I find it and kill it!!

Just thought I would share that little horror story with you!

Now I'm off to try to find it. I have goosebumps just thinking about it :(

Sunny Sunday

Wow, It's been a week since I posted! Sorry :( Been so busy with work and Christmas Shopping.

The weather here is so amazing lately. Super cold..gets to about -3 at night but really sunny, clear and cold in the day. I love it. We've had so much rain lately, that this is a refreshing change.

So I had a few e mails asking how my adventures went with introducing bread back into my diet. I'm happy to say that it's been great! No problems at all. I think I might want to try a different bread next time though. If anyone has any suggestions, throw them my way!

I went to Costco with my mom on Monday evening and got a HUGE Maranatha Almond Butter (737 gram jar) for $5.99! and a giant tub of Sabra Roasted red pepper Hummus. Yum.

It was only $20 for a Huge bag. My mom also bought me some salmon and a bag of avocados, and I ended up making this

Salmon and Avocado Salad.




Ingredients

1 pound wild Alaska salmon fillets or steaks, poached, grilled or broiled, cooled
1 ripe avocado, peeled and cubed
1/2 red onion, thinly sliced
2 tablespoons capers
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh herbs, such as dill, basil, parsley, tarragon and/or chives
Sea salt and ground black pepper
Lemon wedges for garnish
Method

Break cooked salmon into chunks in a bowl. Gently toss with remaining ingredients. Refrigerate at least 30 minutes to allow flavors to blend. Serve with lemon wedges.

So easy and so good.

I was up super early this morning and went for a swim at the pool :)
I then did a bit of yoga when I came home and some weights.

Today is pretty much a chill day. Just relax and watch some movie maybe and FINALLY put up my Christmas Tree!!

I went to the mall with a few friends yesterday and I needed boots in a huge way and ended up buying boots that my friends all hate..Uggs.

Yup, those ones, in that exact color. I know a lot of people dislike them, but I love them. I had a black pair a few years back that I was in love with. So comfortable!

I'm about to make some oatmeal, then dig my Christmas tree out and start decorating!
