Dreaming Of A white Christmas

Good Evening! I feel like I have been abandoning my blog lately, but work has me so busy! It"s a busy season for people to take trips, so I have to plan over 50 trips right now! Good news is, I'm almost done. Friday, everyone will be on way to their destinations :)

I'm till on my oatmeal for breakfast kick. I can't get enough of them :)
My eating lately has been so crazy! But in a good way. I'm eating way more than I ever have and don't feel too bad about it. last night, I had a bowl of cereal, after I was done I decided that i wanted another bowl..so I did! And felt good about it. back in the day, I would have went for a 10 mile jog to burn the few calories off.

This is a recipe I made for dinner last night, and am having the leftovers for dinner today,

Sweet Potatoes with Tempeh

ngredients

1/4 cup reduced-sodium tamari
1 tablespoon mirin (sweet Japanese cooking wine)
1/2 teaspoon granulated garlic or garlic powder
1/2 teaspoon onion powder
1 teaspoon toasted sesame oil
1 (8-ounce) package tempeh, cut into bite-size chunks
2 medium sweet potatoes (about 2 pounds), peeled (optional) and cut into bite-size pieces
2 teaspoons extra virgin olive oil
1/8 teaspoon ground ginger
1/8 teaspoon ground cinnamon
1 tablespoon canola oil
Salt and pepper to taste
2 tablespoons finely chopped parsley
Method

Put tamari, mirin, granulated garlic, onion powder and sesame oil into a wide, shallow dish and stir to combine. Add tempeh, toss to coat, cover and set aside to let marinate for 30 minutes. Meanwhile, toss sweet potatoes with olive oil, ginger, cinnamon and 1 1/2 tablespoons of the marinade from the tempeh. Set the yams aside.

Preheat oven to 350°F.

Heat canola oil in a large skillet over medium heat. Drain tempeh then add and cook, turning frequently, until golden brown, 5 to 7 minutes. Transfer to a 2-quart baking dish, toss with sweet potatoes, salt and pepper then cover with foil and bake until sweet potatoes are tender, 30 to 35 minutes. Garnish with parsley and serve.

Oh my goodness this was absolutely delicious! It is honestly the first time I have ever tried tempeh, and I LOVE it! I have seen Heather (Health, Happiness and Hope) use it quite a bit in her wraps and decided to buy a pack. Best decision ever. I will definitely be buying it again and making this recipe again.

I still have not had any time to even try my new teas out, so this evening I will be having some and will definitely review tomorrow :)

Tonight is going to a relaxing night, I'm going to chill and watch some Gossip Girl :)

I went one more Christmas get together at a friends, nothing too fancy, I leave you with some pics from that evening :)
