Sunny Sunday

Wow, It's been a week since I posted! Sorry :( Been so busy with work and Christmas Shopping.

The weather here is so amazing lately. Super cold..gets to about -3 at night but really sunny, clear and cold in the day. I love it. We've had so much rain lately, that this is a refreshing change.

So I had a few e mails asking how my adventures went with introducing bread back into my diet. I'm happy to say that it's been great! No problems at all. I think I might want to try a different bread next time though. If anyone has any suggestions, throw them my way!

I went to Costco with my mom on Monday evening and got a HUGE Maranatha Almond Butter (737 gram jar) for $5.99! and a giant tub of Sabra Roasted red pepper Hummus. Yum.

It was only $20 for a Huge bag. My mom also bought me some salmon and a bag of avocados, and I ended up making this

Salmon and Avocado Salad.




Ingredients

1 pound wild Alaska salmon fillets or steaks, poached, grilled or broiled, cooled
1 ripe avocado, peeled and cubed
1/2 red onion, thinly sliced
2 tablespoons capers
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh herbs, such as dill, basil, parsley, tarragon and/or chives
Sea salt and ground black pepper
Lemon wedges for garnish
Method

Break cooked salmon into chunks in a bowl. Gently toss with remaining ingredients. Refrigerate at least 30 minutes to allow flavors to blend. Serve with lemon wedges.

So easy and so good.

I was up super early this morning and went for a swim at the pool :)
I then did a bit of yoga when I came home and some weights.

Today is pretty much a chill day. Just relax and watch some movie maybe and FINALLY put up my Christmas Tree!!

I went to the mall with a few friends yesterday and I needed boots in a huge way and ended up buying boots that my friends all hate..Uggs.

Yup, those ones, in that exact color. I know a lot of people dislike them, but I love them. I had a black pair a few years back that I was in love with. So comfortable!

I'm about to make some oatmeal, then dig my Christmas tree out and start decorating!

Love the ugg boots - the salad looks very tasty, but think a little to high in points for someone like me doing Weight Watchers.
Take a photo and show us your decorated tree...

Hmm... I really like Rudi's whole wheat bread. I'm more of a wrap/pita kind of girl, but I buy Rudi's when I need bread.

I haven't found the Starbuck's winter blend in stores yet! I NEED to get me some ASAP. :)

I love costco's salmon - it's so yummy and fresh! I like Uggs just because of their comfort, but they can also look adorable paired wtih the right outfit.
