Friday Night With Jamie

Hello!!

I am enjoying a quiet Friday night in watching Jamie Oliver's Food Revolution. Love this show, love him. Usually I go out on Friday nights, but tonight I just wanted to stay in and chill out. I made this awesome vegan lasagna for dinner



Ingredients

Natural cooking spray
1 (14-ounce) package firm tofu, drained
2 tablespoons nutritional yeast
1 teaspoon garlic granules
Salt and pepper to taste
2 (25-ounce) jars vegan marinara sauce
3 bell peppers, cored, seeded and chopped
12 no-boil dried lasagna noodles

It was absolutely delicious!!

I received a generous package today from Jamie at Global Health .

The weather here is super sunny but super cold :( still only gets to 0 or below at night. I was scraping ice off of my car this morning! I want warm weather!

I went to my nutritionist this afternoon and as I mentioned before, my weight was down 3 pounds in 1 week, well once again, my weight was down another 4 pounds! I have been eating very well, and I have decreased my exercise for over a week. I don't understand. Needless to say, this all has my parents worried, they think I ma not eating and so on..which I am. I just can't figure out what i am doing wrong? Maybe it is that i am still not consuming as many calories as I need to be, it seems as though I am though. Any recommendations on what i should add to my diet?

My nutritionist doesn't think it's good idea for me to go vegetarian while I am recovering, she thinks that I will not be able to consume enough calorie..is this true? I am trying to phase out meat, with the exception of salmon once in awhile.
Right now I am eating 5 smaller(not tiny) meals a day. Maybe that's not a good thing to do while recovering from an ED. I am going to see another nutritionist on Tuesday, so I will see what he has to say :) It's just so frustrating because I thought I was doing good.

Anyways, on to happier stuff! I am so excited about speaking at my old high school this Thursday!!!! very nervous too. I am also getting super excited about my Ireland trip in May!!! I cannot wait :) It will be so good to get away :)

You look adorable as always - love your hair clips! It could be the stress of the past few weeks contributing to weight loss? I think it's possible to gain weight on a vegetarian diet, I have some friends who switched back to eating meat because they gained on a veg diet! What about adding some protein powders or more nuts and nut butters to your meals? I just picked up some chocolate soy protein at WFs to bulk up some of my meals.

Between my metabolism and water weight, there can be drastic weight fluctuations on the scale... it gets so frustrating sometimes!

Sweetie, my advice would be just to start watching things... not obsessively, but just keep an eye on what you're eating. It could just be that you're craving a lot of veggies and other no-so-high-calorie foods and not even realizing that it's making your overall calorie totals decrease. Don't write everything down or count out every calorie, but start focusing on getting in at least 1 calorie dense food (nuts, salmon, bread, nut butter, regular soymilk, tofu, granola bar, granola, etc) at every meal. I know this isn't a relapse or anything like that... it's more than likely just a slight change in your eating habits that is having a negative affect on your weight. You are beautiful, healthy, and strong, and I know you're going to get through this! And I am a "vegetarian" although I don't ever use labels, and I've found that gaining/maintaining weight is VERY possible this way. It's all about making the right choices with the foods in your diet. You might have to play around a bit, but you'll figure it out, I promise!

I hope everythings goes alright with your diet... It´s really weird that you started eating more and exercising less, and you LOSS weight!

you're gorgeous! i u nderstand where your nutritionist is coming from, but ultimately the decision is up to you and only you know what your intentions are. it's completely possible to be vegetarian in recovery without using it as just another way to restrict, and you can definitely get enough calories and nutrients. but vegetarianism isn't going anywhere, you can always go veg when you are a bit further along in your recovery ;)

How cute are you??

There is no way you have to eat meat in order to recover. That is such a misconception and I can't believe your nutritionist said that. There's SO much vegetarian food to eat and things like Seitan are the same calories are meat. You should do what YOU want to do because both ways are right. Maybe just eat 6 small meals a day or make your 5 meals a little bigger! You can do it!!

I just read this post before anything else, what are you speaking at your highschool about? Whatever it is, you'll do great! ;)

you guys look so cute!

i gained weight during recovery by eating nuts. i ate like 2 cups a day (thats over 1,280 calories just in "snacks"). if you go vegetarian or vegan, you can definitely get calories with nuts and oils!
