Hello! I'm still a little sick..but am feeling tons better! I haven't been out of my house yet, but I am going to try to venture out into the great outdoors tomorrow for some fresh air! I start work again Friday, so I better get 100% by then!
I'm pretty much back to eating normally again. I had this awesome, light dinner tonight, courtesy of Whole Foods. Quick Hummus- and Vegetable-Stuffed Pitas
Ingredients
1 whole wheat pita bread, halved
1/2 cup hummus
1/3 cup lightly packed shredded lettuce or baby spinach
1/2 cup assorted raw vegetables such as halved cherry tomatoes, shredded carrots or sliced cucumbers or avocados
Method
Spread half of the hummus inside each pita half then fill with lettuce and vegetables and serve.

This recipe was great because I didn't have to cook, and it was a light meal, easy on my stomach :) I also had a HUGE glass of ginger ale. Been so addicted to it lately.
Just finishing off season 1 of Gossip Girl :) Love that show.
My throat is still achy and scratchy. Does anyone have any good home remedies for this? I have been drinking tons of tea with honey and it doesn't seem to be helping at all :( The sore throat was one of the worst things about this illness. So any suggestions ould be greatly appreciated!
I'm off to have a nice, warm bubble bath and finish the last 2 episodes of Gossip Girl :)
