Hope everyone is having a lovely day. It was so hot here today! ugh. I just feel like going swimming!!! I did,however, manage to get in a great workout today. 60 minutes on the treadmill and 25 mins of weights. Felt so good. I'm definitely doing level 2 and 3 of the shred tomorrow morning. I had a lovely dinner over at my friends..we had this refreshing salad
Watermelon Salad With Tomatoes and Goat Cheese
This colorful salad makes a great addition to any summer cookout. Try with feta and mint instead of goat cheese and basil, if you like.
2 to 3 cups watermelon in bite-sized chunks, seeds removed
2 small ripe tomatoes, quartered
2 to 3 ounces fresh goat cheese, crumbled
2 tablespoons prepared balsamic vinaigrette dressing
2 to 3 tablespoons chopped fresh basil
On a large platter or individual plates, arrange watermelon, tomatoes and goat cheese. Drizzle with vinaigrette and top with basil.
Per serving (about 5oz/152g-wt.): 100 calories (60 from fat), 6g total fat, 3g saturated fat, 5mg cholesterol, 140mg sodium, 10g total carbohydrate (1g dietary fiber, 7g sugar), 3g protein
SOOO good and very refreshing! we also had some amazing turkey and spinach wraps. Yum.
I also went out and bought 5 more bottles of Synergy! I really love them :) No green monster today though, cause I am out of Almond Breeze, spinach and bananas :(
