Pink!

Hi!! The weather here is soooo hot. almost 100 degrees today..blah. Too hot. I managed to get to the gym though and do 60 mins on the treadmill. Felt so good :) My eating is back on track :) I feel awesome. So I decided to show you a little of where I live, I actually live in my aunt and uncles basement suite (basement apartment as I call it :) They let me live here very cheap and it helps me with my independence and being away from my parents. Also helps that my aunt and uncle are on vacation for the whole summer in Italy !!! They left June 1st and wont be back till September 14th :) So basically I have been using their kitchen to cook, cause it's much bigger than mine, and I've pretty much been doing all my dining up there cause it's so nice :) When I moved in 7 months ao, they let me decorate the basement how I wanted, And they knew that I am obsessed with the color pink. so here it is (no laughing please ;)

That's about it really, it's very small, but I love it! I even have a pink bathroom!

And yummy!! it was so good. Kind of a nasty color, but tasted delicious :)
For dinner I had this samlmon/avacodo salad, I used my leftover salmon from the other day..it was pretty darn good.

Serves 4

This easy and quick salad is a great way to use leftover cooked salmon. Serve a spoonful atop a green salad with crispbread or large whole grain crackers.
Ingredients

1 pound wild Alaska salmon fillets or steaks, poached, grilled or broiled, cooled
1 ripe avocado, peeled and cubed
1/2 red onion, thinly sliced
2 tablespoons capers
2 tablespoons freshly squeezed lemon juice
2 tablespoons extra virgin olive oil
2 tablespoons chopped fresh herbs, such as dill, basil, parsley, tarragon and/or chives
Sea salt and ground black pepper
Lemon wedges for garnish
Method

Break cooked salmon into chunks in a bowl. Gently toss with remaining ingredients. Refrigerate at least 30 minutes to allow flavors to blend. Serve with lemon wedges.
There is 30 grams of protein !!!

a girl after my own heart! I love pink! infact I think I may be a little obsessed with it! Being I have two sons, there is never a shortage of pink in my closet!
Your space looks so cute, and it's your own and you have definately made it your own!
Salad looks amazing, going to have to give that a try!
